It’s May and we started this journey like an ogre ... with many layers.

To match the vibes, the universe basically said, “Regrow those onions, Snow.”
So I did.

The first week has already been a beautiful reminder that regrowth doesn’t need theatrics. It just craves the right conditions.

For most counter vegetables and herbs, shallow water is enough to get things started. Watching these scallions curve toward the sunlight sparked something in me about consistency, about helping my body detox, staying committed to the journey, and remembering that ital is vital.

And with that… we have scallions again.

I’d say there’s at least an inch of growth in seven days, and from most readings they’re already close to being ready for another cut and another meal. Life returning to itself that quickly feels like a lesson worth paying attention to.

Soon I’ll be sharing more nutrient water, soil, and regrowth hacks, but until then, here are a few seed sparkers to sit with until this celestial returns.

Simple Recipe: Scallion Ginger Rice Bowl

This is one of those meals that feels simple but comforting in all the right ways.

You’ll Need:

  • Warm jasmine or brown rice
  • Fresh scallions
  • Ginger
  • Olive oil or sesame oil
  • Soft egg or mushrooms
  • A Pinch of Thyme
  • A pinch of sea salt (optional)

Directions:

Warm a little oil in a pan and lightly sauté sliced scallions and ginger until fragrant. Spoon over fresh rice and top with a soft egg or mushrooms. Finish with raw scallions on top for brightness and crunch.

Simple. Grounding. Alive.
